(same as PLNT_SCI 1020). Basic scientific principles in food processing, manufacturing, preservation, quality and safety as influenced by cultural, geographical and environmental factors. Students will be exposed to introductory food science concepts that relate to food crops and foods prepared, processed, preserved and eaten around the world. Prerequisites: Honors eligibility required.
